The Art of Blending

This time of year, the Winery team is in full swing blending our wines for the next up-and-coming bottling run.

Blending is a form of art; we have lots of individual varieties that have been fermented separately and now is the time to bring those components together.

Each tank has its own unique flavour, smell and texture on the palate. we combined these elements to make our perfect blend. Without blending, the wine would be made out of one component, and we would end up with a wine that lacks in areas.



Oak Ageing

Oak ageing is a traditional winemaking practice that involves storing wine in oak barrels for a period of time. This process allows for the slow exchange of oxygen and the extraction of compounds from the oak, which can enhance the wine's flavour, aroma and texture. Oak Ageing can impart a variety of flavours such as vanilla, spice, and toast, and can also contribute to a smoother mouthfeel and increased complexity.

The Winery team are currently ageing 3 wines in barrels as part of a limited release. These wines will spend another 5 months in the barrel before they will be assessed for bottling. Make sure you are signed up to our Newsletters to be the first to know when these are released.
